The Rustlers Burger Hacking Challenge

When the schedule is packed it can be hard to sit down and cook a complicated meal. Sometimes we find – especially after a late swim or a visit to grandma – that we want something quick, easy and tasty. Whilst I would prefer to cook my meals from scratch, sometimes it’s nice to whip something up in 5 minutes, especially when you’ve got a really hungry family standing behind you asking you if it’s ready yet. I do like a takeaway night for convenience – but takeaways are incredibly expensive when you think about the ingredients and rarely impress me that much.

Rustlers Southern Fried Chicken Burgers are ready in 90 seconds – which is crazy fast and are incredibly versatile. You can dress them up literally however you want them. I’ve put together two different ideas for creating a really tasty burger that both kids and adults will enjoy using foodstuffs you likely have in your fridge or cupboard already.

Here’s a bit of a microwave hack for you – wrap the burger in a piece of kitchen towel in the microwave. This helps absorb any extra moisture and avoids that “soggy bottom” issue you can often get when microwaving bread and other absorbent foods!

So without further ado, here are my top two Rustlers Burger Hacks!

Spicy Salsa Chicken Burger

using Rustlers Southern Fried Chicken Burgers

Course Main Course
Prep Time 4 minutes
Cook Time 1 minute
Total Time 5 minutes
Servings 1 person

Ingredients

  • 1 Rustlers Southern Fried Chicken Burger
  • 2 tbsp mild or hot salsa
  • 3 thin slices red pepper or padron pepper, raw or from a jar

Instructions

  1. Remove the top of the bun.

  2. Spread two tablespoons of hot or mild salsa over the the top of the chicken burger.

  3. Add sliced sweet red or padron peppers. You can also use pre-cooked peppers in oil from a jar or tub.

  4. Replace the top of the bun.

  5. Microwave for 90 seconds.

Recipe Notes

The salsa I used for this is just Tesco's own salsa from the Dorito's section, but you can buy any brand salsa from any supermarket to add some flavour and spice to the chicken burger. This keeps for a long time in the cupboard but of course, you can make your own salsa if you have time!

For the peppers you can use thin slices of red pepper, or roasted and oiled peppers from a jar. For kids who don't like pepper, tomato slices will also add a gentle crunch and get that important portion of vegetables.

Serve with sweet potato fries and chunky coleslaw if eating for a main meal, or serve on its own for a tasty and filling lunch!

For a more Mexican feel, you could serve the remaining salsa from the jar with tortilla chips, topped with cheese. Jalapeno peppers will also add a tasty kick for those who like it with a little bit of extra fire!

Zesty Lemon Chicken Burger

with Rustlers Southern Fried Chicken Burgers

Prep Time 4 minutes
Cook Time 1 minute
Total Time 5 minutes
Servings 1 people

Ingredients

  • 1 Rustlers Southern Fried Chicken Burger
  • 1 lemon
  • 1 tbsp mayonnaise
  • 1 tomato
  • 1 lettuce leaf

Instructions

  1. Grate the lemon until you have 1 tablespoon of rind.

  2. Squeeze out the lemon juice into a bowl.

  3. Add the rind and a tablespoon of mayonnaise to the lemon juice in the bowl.

  4. Cook the Rustlers Southern Fried Chicken Burger in the microwave for x seconds.
  5. Remove the top and bottom of the bun.


  6. Generously cover the top and button of the bun with the zesty lemon mayonnaise.

  7. Place the Chicken Burger back on the base of the bun.

  8. Slice the tomato into thin slices.

  9. Add the sliced tomato and lettuce leaf on top of the Chicken Burger.

  10. Replace the top of the bun.

  11. Microwave for 90 seconds.

Recipe Notes

This incredibly simple and quick recipe adds a fresh grated lemon, giving the burger a delicious zesty taste. If you don't have a fresh lemon, you can use lemon juice from the cupboard. With fresh salad added to the top, it's crisp, tasty and an easy way to sneak in some health portions!

For an evening meal, serve with potato wedges and corn on the cob or the family's favourite side.

You can tell from my photos I’m not cut out for the next season of Great British Bake Off, but they did look yummy, and are definitely something that anyone can make in a jiffy! I think it’s really handy to have this sort of filling meal item in the fridge that you can whip it out when you want something tasty at short notice and they’re so versatile you can find something to dress them with that fits any taste.
